Pancakes are a classic breakfast dish that can be enjoyed year-round, but they are especially popular on Pancake Day (also known as Shrove Tuesday). Here are some tips to make the perfect pancakes:

  1. Start with the right ingredients: For basic pancakes, you'll need flour, baking powder, sugar, salt, milk, eggs, and butter or oil. Make sure your ingredients are fresh and at room temperature.

  2. Mix the batter: In a large mixing bowl, whisk together the dry ingredients (flour, baking powder, sugar, and salt). In a separate bowl, beat the eggs and then mix in the milk and melted butter or oil. Pour the wet ingredients into the dry ingredients and mix until just combined. Be careful not to overmix, as this can make the pancakes tough.

  3. Let the batter rest: Let the batter sit for 10-15 minutes before cooking. This allows the baking powder to activate and helps the pancakes to rise and become fluffy.

  4. Heat the pan: Heat a non-stick skillet or griddle over medium heat. You can test the heat by dropping a small amount of batter onto the pan. If it sizzles and forms small bubbles, the pan is ready.

  5. Use the right amount of batter: Use a ladle or measuring cup to scoop the batter onto the pan. Use about 1/4 to 1/3 cup of batter for each pancake, depending on how big you want them to be.

  6. Cook the pancakes: Cook the pancakes for 2-3 minutes on the first side, or until small bubbles start to form on the surface. Flip the pancakes and cook for another 1-2 minutes on the other side, or until golden brown.

  7. Keep the pancakes warm: As you cook each batch of pancakes, keep them warm in a low oven on a baking sheet lined with parchment paper.

  8. Serve and enjoy: Serve the pancakes with your favourite toppings, such as the classic lemon juice and sugar, but also try maple syrup, butter, fruit, or whipped cream. Enjoy!

You can buy all these ingredients in Sudbury. Why not pop to Sudbury Market and see what fruit's available at Cox's?  Eggs and herbs are also available on Market Hill.

Remember, making perfect pancakes takes practice. Don't get discouraged if your first batch doesn't turn out perfectly or you toss your pancake and it ends up on the floor or ceiling. This has happened to the best of us.

Keep trying and have fun experimenting with different flavours and toppings.

Happy Pancake Day!
