It has to be you, you beautiful  Marches Blue – our very own local Shropshire Cheese. The Shropshire Cheese Company,  based in  the beautiful Tanat Valley have got a few whacking cheeses under their belt, but this is The One for me.  It has all the characteristics of an affair of the heart , delicate blue veins peeping from a creamy skin, faint wafts of almonds and petrichor,  and that young, semi ripe texture that veers between crumbly and silky. 

Not too blue, not too heavy, try it with something sweet – grapes, apples, or something nutty – spread over a decent cheese cracker or sourdough bread.  A smidge mixed into cream would make a perfect topping napped over a fine piece of steak.  I suspect it would be a rather wonderful addition to the new healthy dish of the day – Roasted Cauliflower with melted blue cheese:-

1 head of fresh cauliflower, washed and chopped
about 1tbsp olive oil
salt & pepper
about 2tbsp balsamic vinegar
2oz (or more to suit taste)  crumbled Marches Blue cheese

Preheat oven to 180C. Toss cauliflower in olive oil and arrange in a single layer on a baking sheet. Roast for about 20 minutes, then remove from oven. Drizzle with balsamic vinegar, season with salt and pepper, and toss to distribute. Sprinkle with cheese and returns to oven for another 5-10 minutes.

 We stock Marches Blue for your to enjoy all year round, but on Saturday 13th and Sunday 14th of July, Shropshire Cheeses are part of The Oswestry Food and Drink Festival – so it is  your chance to meet the makers and sample, buy  and enjoy , all their cheeses.
