Celebrate St David's Day with Radfords Fine Foods

Admittedly this is a fabulously rich dish but deeply comforting.  Either eat it as it is, on its own, or for even more fabulousness, partner it with some of our lovely Welsh Dragon sausages, or juicy lamb steaks (both available from Radford’s Butchers on Church Street).

 

Leek, Cheese and Potato Bake.

650g Potatoes, peeled and thinly sliced

Tablespoon olive oil

150g Leeks, thinly sliced

2 Garlic Cloves, finely chopped

Salt and freshly ground Black Pepper

2–3 fresh Thyme sprigs

100g crumbled Caerphilly cheese

300 ml Double Cream

25g Butter

Method

  1. Preheat the oven to 190C, Gas 5. 
  2. On a gentle heat, sauté the leek, garlic and thyme in the olive oil until just soft.
  3. Put a layer of potato in a buttered 1.4 litre shallow ovenproof dish, add some of the sauté’d leeks, sprinkle cheese, salt and pepper and repeat, finishing with a layer of potato. 
  4. Pour the cream over the top and dot with the butter. 
  5. Bake in the oven for 30–40 minutes until the top is golden brown and the cream has been mostly absorbed by the potatoes. 
  6. Check for doneness, then sprinkle any remaining cheese over the top and put back in the oven for 10 minutes or so, until melted and slightly golden.
