Admittedly this is a fabulously rich dish but deeply comforting. Either eat it as it is, on its own, or for even more fabulousness, partner it with some of our lovely Welsh Dragon sausages, or juicy lamb steaks (both available from Radford’s Butchers on Church Street).
Leek, Cheese and Potato Bake.
650g Potatoes, peeled and thinly sliced
Tablespoon olive oil
150g Leeks, thinly sliced
2 Garlic Cloves, finely chopped
Salt and freshly ground Black Pepper
2–3 fresh Thyme sprigs
100g crumbled Caerphilly cheese
300 ml Double Cream
