Meet Chef Martin Burke who will be at Hitchin Wine and Food Festival

About me; Martin Burke, I trained in London restaurants - Smiths of Smithfield, Soho House, The Wolseley, among others and then went freelance, cooking for many notable people, and learning many styles along the way.

I now have my own business and provide an international array of Vegetarian and Vegan dishes for all manner of events; conferences, weddings, film shoots, etc.. I am also currently offering set lunch boxes, delivered to homes and businesses in Hitchin every Thursday. Palestinian, Thai, Japanese and European offerings at the moment.

I am a chef because i love to feed people, I am vegetarian because the earth needs some attention and I wish to present food that will appeal to even the most hardcore carnivore, to encourage a little less meat eating.

The business is special as i offer my clients the opportunity to design a bespoke menu based on their tastes, budget, season, and dietary requirements,  and I encourage organic produce where budgets allow.

My most popular seller must be Falafel and middle eastern dishes.

Something that most people don't know about me....I cooked lunch at Sir Tom Stoppard's pad in Chelsea Harbour regularly a few years ago, always the same menu and always different guests, chinwagging with some personal heroes after i just cooked for them still seems surreal.

My favourite meal is probably Spaghetti, Aglio, Olio e Peperoncino, a dish from Naples - Spaghetti tossed in loads of golden brown Garlic, Chilli and top quality extra virgin Olive oil. Simple and sublime.

My favourite drink is currently Kombucha, a lightly fermented green tea that i flavour with Lemongrass, Ginger and a host of other flavours. It's good for you as well as tasting great.

I am now collaborating with the Nourish cafe at the Letchworth centre for healthy living, and will be offering some Tapas evenings in the near future, a set menu of international Vegetarian and Vegan delights awaits!

Tickets cost £6 and you can gain entry from 11am - 6pm.  Re-admittance is allowed.  On the day you can sample wines from all over the world and this year we also have Puddingstone Gin Distillery.

Our friends from The Wine Education Company will also be at the wine festival giving 10 minute wine school talks and will give you the fundamentals of wine in a precise and condensed format.
