Pumpkin Soup

After Trick or Treating in Chelmsford this Halloween I am going to finish the night off with a bowl of Pumpkin Soup.  Why not try it?

What you will need:

2 tbs of olive oil

1 oinion finely chopped

1 leek white part only finely sliced

1 tsp ground cumin

1 large pototate, peeled and diced

1 garlic clove crushed

1L campbells real stock either chicken or vegetable

1/2 tsp ground coriander

1kg peeled pumpkin, diced

125ml thin cream (yum yum)

1/2 tsp of freshly grated nutmeg

What you need to do:

Heat the oil and add the leek and oinion for about 2-3 minutes until soft.  Then pop in the garlic and spices stirring for 30 seconds.  Add the potatoe, pumpkin and stock and bring to the boil.  Let this simmer for 30 minutes (put a cover over the soup).  Once this is done let the soup cool slightly and then blend.  

Put the soup back into the pan and stir through the cream whilst reheating (gently).  

Season it to your taste and enjoy.
