Success of bakery leads to new opportunities

Coppice has added new members to the team to help provide a range of baked goods to local businesses as well as their own food hall, Forage, and The Fig & Olive restaurant.

The bakery began from humble beginnings with just one person in a small section of The Fig & Olive kitchen.

Jo Kitteridge-Jones, who is now head baker, started working for Coppice as a member of the front of house staff but she now manages a team of seven alongside fellow head baker Sam Guesford. 

Sam said: “It’s been amazing to watch Coppice grow over the last 10 years. 

“I originally created cakes for The Fig & Olive on my own but now I work alongside a team who come in everyday at 5am to make fresh bread, pastries and cakes. We receive training regularly too so we are constantly learning how to make new things which keeps things exciting for us and our customers.”

Due to the growth and success of the bakery, Sam and Jo are working with local businesses around the area to provide wholesale goods.

They already supply their homemade artisan goods to Aston Villa Football Club training grounds but want to expand their reach to other cafes and restaurants.

Jo said: “We really enjoy making fresh bread for the Aston Villa Football club so we want to continue doing that for other businesses around the area.

“Our main focus would be bread and pastries but we can supply anything that is needed and are always happy to help.”

Coppice is also home to the popular Fig & Olive restaurant, as well as a several boutiques – from women’s fashion to furniture paints.
