Pancake Day is almost here again, and as well as lemon and sugar, that also means the annual Rugby Rokeby Lions ladies fancy dress pancake race!

 

Your local Lions club, the Rugby Rokeby Lions are part of an international organisation dedicated to improving local communities. They have been serving the local community of Rugby for over 40 years, and are always looking for new members to help them help the community and enjoy the feeling of helping others.

 

The annual ladies pancake race is one of their most enjoyable, entertaining events of the year, and is a fun event to raise funds for deserving causes in the local area.

 

The race begins at noon on Tuesday 21st February at Sheep Street in the town centre. So why not come down and have a giggle by supporting all of the ladies taking part in this year’s event?

Are you going to make your own pancakes this year?

 

Yes, we know that the store bought pancake mix is cheap and easy but with only three ingredients that should be found in any kitchen, making your own is just as simple and economical!

 

All you need is:

 

  • 110g/4oz plain flour, sifted
  • 2 eggs
  • 200ml/7 fl oz milk, mixed with 75ml/3 fl oz water

 

Sift the flour into a mixing bowl and make a well. Break the eggs into the well and mix, making sure that all the flour is incorporated. Slowly add the milk and water, whisking well until you have a smooth batter.

 

Dribble a tiny amount of vegetable oil into a large frying pan on a medium heat. When the pan gets really hot, turn the heat down slightly and then add a ladle of the batter, tipping it around the sides to coat the bottom.

 

It should only take 30 seconds to a minute to cook the first side and even less for the other side; you can use a palette knife to gently lift the sides. Flip with a pan slice or if you're feeling confident, toss in the air to turn!

 

Serve with sugar and lemon juice to create a delicious, traditional pancake!
