The best way to plan ahead with veg is 'blanching'!
Simply boil your vegetables so that they are barely cooked through, then immediately drain the water and plunge the veg into iced water. This will stop them from continuing to cook and so keeping the veg nice and crisp.
As soon as the vegetables are cooled, remove with a slotted spoon.
When you're ready for serving place in boiling water for 1 minute to re-heat. They're then ready for the table!
