I have just had a great time at the Four Gables Fine Dining Food Academy…
A real hands-on day with as much fun as food.
David Gillott – the owner and chef – has a passion for food and a natural talent for teaching and passing on his knowledge.
We made several dishes – all really simple and yet tasty and impressive – just what you need for dinner parties and home entertaining.
We started with bread rolls – so simple – and so rewarding – You Need to Knead. David showed us the kneading technique and gave valuable tips for that perfect bread rise and crispy crust.
A pea and mint veloute (foodie name for a creamy soup) – only a few ingredients but the result was delicious and we got tips on how this can be varied to use other ingredients.
A wonderful risotto – I wonder why I was ever afraid of making a risotto – so simple and so tasty.
We also produced a herb infused oil, chutney, gremilata and a superb lemon posset – all in one day.
But even more important than the cooking was the teaching. Throughout David gave tips and help with showing us new techniques, and giving us confidence in our cooking.
Never again will I have seeds everywhere when I chop a pepper – or find pieces of core from an apple, and I can now dice an onion so fine – you can hardly see it.
We came away with a large goodie-bag as well – copies of all the recipes used together with the food we had cooked during the day, to share with friends at home.
Whatever your level of cooking – this is really a great opportunity to see the skills of a professional chef – and learn some of those skills yourself.
It’s a real fun day – learning new skills in a relaxed and friendly atmosphere.
