Pick your own pumpkins and turn them into muffins!

The Old Lorry Farm Shop have pick your own pumpkins on the go!

So we asked Pieter at The Chequers Inn for a pumpkin recipe and he came up with Honey Pumpkin Muffins with Cream Cheese Frosting. Yes please!

"To make about 12 you need these ingredients:
• 1 1/2 cups whole wheat flour
• 1/4 cup wheat germ
• 1 tsp cinnamon
• 1 tsp ginger
• 1 tsp baking powder
• 1/4 tsp baking soda
• 1/4 tsp salt
• 6 tbsp sugar
• 1/3 cup olive oil
• 1/4 cup honey
• 1/3 cup almond milk
• 1 1/4 cup pumpkin puree (cook pumpkin in salted water and teaspoon of sugar till soft, drain very well and mash with a fork or potato masher)
• 1 egg
• 1 tsp vanilla bean paste or vanilla extract
• Cream cheese frosting (buy it form shop)

To make the frosting yourself mix all the ingredients below till smooth
• 250g cream cheese
• 1 tsp margarine
• 1 tsp vanilla bean paste or vanilla extract

Instructions
1. Preheat oven to 350.  Line a muffin or cupcake tin with muffin / cupcake liners.


2. In a large bowl, whisk together flour, wheat germ, spices, baking powder, baking soda, and salt.  In a second large bowl, combine sugar, oil, honey, milk, pumpkin, egg, and vanilla.  Add this mixture to the flour mixture and stir until just combined.


3. Pour batter into prepared muffin tins, filling 3/4 full.  Bake until cooked through and a toothpick inserted in the centre comes out clean, about 20 minutes.  Cool for 15 minutes on a wire rack, then remove from pan to set aside and cool completely.


4. When cool, top with cream cheese frosting.

PS: I like to top my muffins with chopped pecan or walnuts.

It is healthy and totally delicious - a must as it is the season!  You can pick your own pumpkin at The Old Lorry Farm Shop on our doorsteps so to speak."
