Val's Great Recipe for Salmon and Spinach Parcels;

  • 1 pack spinach,
  • 1 puff pastry
  • Pack of two fresh salmon fillets
  • Salt and pepper
  • Blanched spinach leaves, no need to add water in sauce pan drained leaves under cold water, squeeze out all the excess liquid and chop finely.
  • Season with salt, pepper, and a bit of grated cinnamon and set a side
    Rinse salmon under cold water
  • Season with salt pepper and squeeze half a lemon on it
  • Place salmon in a baking pan add onions tomato and place in the oven to steam for 20 minutes
  • After 20 minutes let salmon cool
  • Roll out puff pastry on a floured board. Spread the spinach on the pastry then put the salmon on top and roll the pastry.
  • Brush the pastry with egg wash
  • Bake for 20 minutes in a preheated oven 220C or Gas 7until pastry is crisp or brown
  • Serve with your favourite salad and Enjoy
