Cream of celeriac and Cox's orange pippin soup, finished with hazlenut oil

 

Crab gratin scented with saffron and ginger topped with Japanese breadcrumbs

 

Smooth woodpigeon sausage on a bed of puy lentils with beetroot and juniper sauce

 

Rillettes of duck with confited Victoria plums and toasted walnut bread

 

Seared smoked salmon with cauliflower cream and glazed blood orange


Mains

West Sussex free range turkey, sage and onion stuffing and seasonal vegetables

 

Ragout of local game with thyme dumplings, fondant potato and creamed savoy cabbage

 

Welsh shoulder of lamb, cooked for 24 hours topped with a herb crust served with potato puree, honey roast winter vegetables and a rosemary jus

 

Open saffron and wild mushroom ravioli with aubergine caviar, butternut squash puree and a Madeira beurre blanc

 

Poached Scottish smoked salmon with chargrilled asparagus and salsify with sauteed baby leeks and a red wine sauce

 

Chargrilled 8oz ribeye steak with triple cooked chip, vine roasted tomatoes and a bearnaise sauce
