Sufficient - allow 300g/10.5oz per person

Seasonable - All year

Ingredients: Ribs of beef

Heat your oven to 400F/200C/Gas Mark 6

If you have the facility to brown the meat off in the pan before you place it in the oven do this as it considerably speeds up the cooking process and "adds to the flavour"

Allow 15 minutes per 16oz for rare and leave to rest for 20 minutes before serving. Allow 20 minutes per 16oz for medium.

Yorkshire Puddings:

  • Lard
  • 290ml/ 1/2 pint of milk
  • 4 eggs, beaten
  • 255g/9oz self raising flour, sifted
  • salt and freshly ground black pepper

Beat and season the eggs, stir in the flour until a smooth consistency. Place the lard in the pudding pan and heat the pan in the oven. Pour in the batter when hot and bake for about 20-30 minutes serve immediately.

Dont forget the horseradish sauce!
