Rising temperatures and cooking just don't go together - or do they? Local caterer Marie-Clare Cooks has a great "no-cook" light lunch or supper dish for her July recipe of the month - Trout Ceviche.

The fish simply "cooks" in the lime juice in the refrigerator and is ready in about an hour, giving you time to chill yourself.
