Pell the bananas and cut in half lengthways. Melt the butter in a frying panand as it begins to bubble, put inthe bananas. Cook them very gently on both sides for 2 minutes, add the lemon juice. Flame the rum (warm it in a ladle or spoon, ignite and pour over the bananas) (Do this bit with care)
Sprinke with sugar and serve immediately. For that extra treat pout over some double cream.
if you prefer ypu can use brandy in place of the rum.
