Porridge or Eggs

It appears that the snow has finally left us…hurrah I hear you all shout….back to normal…well back to keeping upright at least! Today I placed a jug of daffodils on my dining room table…I thank them kindly for brightening my days. Breakfast was a bowl of porridge as on my return from the chicken shed I found no eggs….hmmm you would think that the cosy hay beds those girlies lay in, their rather luxurious surroundings, and quiet green garden would be prime conditions for egg laying? I pondered for a while…and decided that even chickens can have bad days.

 

If you have lazy chickens or a shortage of eggs.....

  1. Put the oats in a saucepan, pour in the milk or water and sprinkle in a pinch of salt. Bring to the boil and simmer for 4-5 minutes, stirring from time to time and watching carefully that it doesn't stick to the bottom of the pan, cos if it does it’s a real pain! Or if you prefer the non saucepan burning method, try this in a microwave. Mix the oats, milk or water and a pinch of salt in a large microwave proof bowl, then microwave on High for 5 minutes, stirring halfway through. Leave to stand for 2 minutes before eating as it will be very hot!
  2. To serve. Pour into bowls, sprinkle with sugar or drizzle with honey.
