Spicy Chicken Curry

Rochdale is becoming increasingly multicultural. With an abundance of different cultures we are given the gift of food from across the globe. One of our favourite Foreign foods is without a doubt.... CURRY! 

So here's an easy recipe for a scrumptious chicken curry made from scratch!

Ingrediants!

1 skinless chicken in seperated into pieces
3 Tbls Oil
Garlic 1/2 clove
Onions 3
1 Tbls Chopped Ginger 
Tomatoes 3
Cayne Pepper-1 1/2 tbls
Tumeric-1/4 tbls
Crushed Coriander-1 tbls
salt-1 1/2 tbls
finely chopped cilantro leaves

Directions:

Heat the oil until it's a little more than warm.
Chop the onions into cubes and pop them in the hot oil.
Fry the onions until they are a browny red colour and then add the chopped garlic and ginger.
Stir for about 3 minutes and then add your chicken.
Don't move your chicken about too much or it will come apart.
Cook the chcken in the onions until they change to a light brown colour.
Chop up your tomatoes and add them to the chicken.
Stir a little and try to mush up the tomatoes so they disapear quicker, be careful not to break the chicken.
Now add the spice, I normally start with the salt, moving onto the Tumeric, then the coriander and then the Cayne Pepper.
Keeping it on a high flame, mix in the spices, add half a glass of water and put the lid on and let it cook until the water seperates from the oil. 

Stir the curry and throw in a handful of Cilantro Leaves and it's ready to eat!

Serve it hot with chapatis/rice or a salad!
