Sausage and Chilli Bean Cobbler

Serves 4

  • 1 tbsp olive oil
  • 1 large onion, diced
  • 2 garlic cloves, chopped
  • 5 sausages, skinned and diced
  • 1-2 tsp chilli paste/puree
  • 4 tbsp tomato puree
  • 400g can cannelloni beans
  • 4oog can butter beans
  • Small can baked beans
  • 250g self-raising flour
  • 100g butter
  • 150 ml milk
  • 2 tsp dried sage

 

  1. Heat the oil and fry the onions over a medium heat for 5 mins. Then add garlic and sausage meat and chilli paste and stir it in well. Cover and cook for 5 mins.
  2. Add tomato puree and all the beans, cover and cook for 10 mins, while you make the cobbler topping.
  3. Heat oven to 180C.
  4. Put flour and butter into a bowl and rub it together until it forms breadcrumbs.
  5. Stir in the sage and milk until mixture forms sticky dough.
  6. Spoon sausage and bean mix into an ovenproof dish and tear off golf ball sized pieces of dough, sitting them on top. (You can have plenty of gaps)
  7. Bake for 25 – 30 mins until the top is golden.

2 tsp of chilli paste will have a bit of a kick to it, so only use 1tsp if you prefer it mild, or leave it out completely,  if you are feeding it to the kids!!!!
