With Easter around the corner many of us especially the children amoungst us are thinking of easter eggs!

But how many people can remember the Simnel cake as pert of the Easter fair, this light fruit cake with its layer of cooked marzipan through the middle topped with more marzipan and decorated with 11 marzipan balls symbolising Christ's faithful disciples.

The Name comes from the Latin word simila meaning "the very best wheat flour"
