Our Chef
Our new chef Paul joins Tuddenham from restaurant Sat Bains where he was Sous Chef and instrumental in the restaurant achieving 5 AA Rosettes and retaining their Michelin star.
His philosophy is to use modern cooking techniques to enhance fresh seasonal ingredients. Only the finest British produce is used, focusing on exciting flavour combinations, textures and temperatures resulting in stimulating yet accomplished food. Two years under the direction of Sat Bains at his eponymous Nottingham restaurant tied with experiences drawn from his time at the French Laundry in California and WD-50 in New York has resulted in the creation of sophisticated dishes with minimal fuss.
