The Amore Restaurant, Otley Rd, Baildon has an Italian Chef, Genaro from a village near Naples (Napoli) in the region of Campania in the South of Italy about 2 hours south of Rome .
He grew up with an interest in food, with several members of the extended family involved in the food and restaurant business.
Genaro has over 30 years experience as a chef, split between Italy and the UK, and is now serving authentic recipes from his home town to diners at the Amore Restaurant in Baildon, Bradford.
Being brought up in a coastal area, it is no surprize that Genaro favours fish dishes, and his specialities include Tuna or Salmon Cannelloni. Of course the menu has a range of pasta and pizza dishes in addition to daily specials.
Genaro has observed that many Italian recipes have been 'adapted' by chefs in restaurants in the UK over the years, and are not cooked using the same ingredients and traditional techniques that are still used in the villages in this area of Italy.
Genaro still uses these methods, and imports some of the key ingredients from Italy to ensure that the authentic taste of the dish can be recreated - so diners at the Amore can expect to taste the difference!
